Sweet Dinner Rolls

This is quite simply one of my "go to recipe" for holidays, potlucks, and get togethers.

Audrey's Sweet Dinner Rolls (adapted from the Sweet Dinner Rolls recipe on allrecipes.com)


Ingredients
1/2 cup warm water
1/2 cup warm milk
1 egg
1/3 cup butter, softened

1/3 cup honey
1 tsp salt
3 3/4 cups bread flour
2 1/4 tsp active dry yeast

Directions:
1. Place warm water, milk, egg, butter, salt, bread flour and yeast in bread machine. Select dough cycle. Press Start

2. When dough finishes, turn onto lightly floured surface. Divide into 16 wedges. Roll wedges into rolls. Place rolls in greased dish 13 x 9 inch dish(I use pampered chefs large pan-ungreased). Cover with Saran Wrap and  kitchen towel and allow to rise in dark warm space for 1 hr.
3. Preheat oven 400 degrees. Cook for 10-15 minutes until golden brown.

Directions: Measure warm water, milk, egg, butter, salt, bread flour and yeast. I purchase my bread flour in bulk when possible (unbleached king arthur flour), yeast in bulk (costco brand) and typically use unsalted butter for baking. Place all of these items in the bread machine.

When the dough cycle finishes, turn the dough on a lightly floured surface and divide into 15 wedges.


Cover with Saran wrap.
Cover with a dry clean towel.  Preheat oven to 200 degrees.  Place in oven and turn oven off.  Allow to raise for one hour.













Once raised, remove from oven and remove towel and saran wrap.  Pre-heat oven to 400 degrees.  Bake for 10 - 15 minutes.











Leave on stone for  a few more minutes if you like the bottoms of the rolls to be more brown.

BBQ Chicken Pizza

Trader Joe's pizza dough
marinara sauce or (tomato paste/tomato sauce-with dried basil/oregano)
BBQ sauce (sweet baby rays)
Chicken Breast
Montreal Steak Seasoning
Onion
Olive Oil
Cheese mixture of your choice (colby jack, mozzarella, etc.)

Cut up the chicken breast into cubes. Pan stir fry the chicken in olive oil with cut up onions and montreal steak seasoning to taste. Mix- 1/2 marinara sauce 1/2 BBQ sauce and spread on the pizza dough. Then top with chicken mixture and cheese mixture. Bake at 425F for 8 minutes until pizza is crispy and bubbly.

Tumeric Tofu

This is best served with batsmati or jasmine rice.

Ingredients

1/2 a block of tofu. sliced
olive oil
tumeric
curry powder
salt and pepper to taste
sliced onions

Heat a dash of olive oil in a non-stick frying pan. Place slices of tofu in the pan. Season tofu with salt, pepper, tumeric, and curry powder. Place onions over tofu. Brown tofu on both sides, and cook onions until clear.
Serve over rice.

Asian-inspired Tilapia

Asian-inspired Tilapia

Serve this dish with Trader Joe's batsmati rice medley and stir fried green beans

Preheat oven to broil. Coat a pan with cooking spray. Place 3 pieces of tilapia in the pan and season with salt and pepper to taste.

Whisk the following ingredients in a bowl:
1/2 a cup of sliced green onions
1 Tbsp minced fresh ginger
1 tsp fresh minced ginger
4 Tbsp soy sauce
1 Tbsp sesame oil

Coat tilapia with soy sauce mixture. Allow tilapia to marinate for approximately 30 minutes. Broil for 8 minutes. Serve over a bed of wild rice. :)

Almond Chicken

Ingredients

1/2 cup sliced raw almonds
1/4 cup butter
1/4 cup flour
ground sea salt to taste
ground black pepper to taste
1 lb chicken breast
1/2 tsp dried rosemary leaves
1/2 cup dry white wine

Saute almonds in butter until golden brown. Approximately 4 minutes. Remove almonds and set aside. Combine flour, salt, and pepper in shallow bowl. Flatten chicken between wax paper with meat hammer. Dust flattened chicken with flour mixture. Stir rosemary into butter left on skillet over medium heat. Add chicken to butter mixture and brown the chicken on both sides. Stir in wine. Cook 5 to 10 minutes or until chicken is fully cooked. Stir almonds into mixture. Cook 1 minute. Serve with almonds over chicken.

Lemon Pepper Tilapia

Dinner for Two:

Ingredients

3 tilapia fillets
olive oil
half a lemon
lemon pepper seasoning
dried parsley flakes
garlic powder

Trader Joe's Basmati Rice Medley

Steamed Broccoli or green beans

Directions
Preheat oven to broil. Start cooking rice as directed on package. Place tilapia in oven safe dish. Rub olive oil over fish fillets. Generously sprinkle lemon pepper seasoning, parsley flakes, and garlic powder over fillets. Squeeze juice from half a lemon over fillets. Broil for 8 minutes. Serve fish over the rice and with a side of steamed vegetables. Enjoy!

Ginger Glazed Salmon

Ingredients

Two Salmon Fillets
4 Tbsp dark soy sauce
2 Tbsp honey
4 Tbsp minced fresh ginger

Preheat oven to broil. Rub 2 Tbsp dark soy sauce and 1 Tbsp honey on one salmon fillet. Top with 2 Tbsp minced fresh ginger. Repeat with other salmon fillet. Broil salmon for 13 minutes. Enjoy!

Banana Bread

Perfect for a mid-week dessert or snack.

Ingredients

1/2 cup unsalted butter
1 cup white sugar
1 tsp vanilla
1 1/2 cups all-purpose flour
1/2 tsp cinnamon
1/4 tsp cloves
1 tsp baking soda
1/2 tsp salt
3 ripe mashed bananas
walnuts to taste

1. Preheat oven to 325 degrees. Grease a 9 x 5 inch loaf pan.
2. In a large bowl cream together the butter, sugar, and vanilla. Stir in flour, cinnamon, cloves, baking soda, and salt. Blend in the mashed bananas. Add nuts. Pour batter into prepared loaf pan. 3. Bake for 70 minutes or until knife inserted into center of loaf comes out clean. Enjoy!

Oven Fried Chicken

I don't like deep frying. When I have a recipe that calls for deep frying, my husband normally does the honors. This mid-week recipe normally satisfies our craving for fried chicken.

Ingredients

6 chicken drumsticks skinned
4 chicken breast halves skinned
1/2 cup low fat buttermilk
2 cloves fresh garlic
1 tsp paprika
3 cups panko crumbs
3 tsp cajun seasoning
1/2 tsp garlic powder
1/8 tsp fresh ground black pepper
cooking spray

1) Combine buttermilk, garlic, and paprika in small bowl. Place chicken in large bowl. Pour buttermilk mixture over chicken. Marinate for 8 hrs.(shake it up to ensure its thoroughly coated)

Preheat oven to 400 degrees
2) Combine panko crumbs, garlic powder, cajun seasoning, and black pepper in large zip lock bag. Place chicken in bag one, by, one. Shake to coat. Place chicken on cooling rack placed on cookie sheet. Repeat with all pieces of chicken. When finished, spray all pieces of chicken with cooking spray. Place pan on lowest oven rack and cook for 45 minutes.

Vegetable Quesadillas

Perfect for lunch or a mid-afternoon snack

Ingredients

1 Tbsp olive oil
4 slices red bell pepper
6 mushrooms sliced
1 cup fresh spinach
1 tsp minced garlic
salt to taste
1 cup chedder/mont. jack cheese blend
Mrs. Dash Southwest Chipotle Seasoning Blend
4 corn tortillas
cooking spray

1. Heat olive oil over med-high heat. Add mushrooms and saute for 1 minute. Add garlic and red bell pepper. Cook until pepper and mushrooms appear almost fully cooked. Add spinach and salt to taste. Cook until spinach is wilted. Transfer mixture to a small bowl. Drain liquids.
2. Lower heat to medium. Spray pan with cooking spray. Place corn tortilla on pan. Flatten and evenly distribute half of mushroom mixture on corn tortilla. Sprinkle half of cheese mixture over mushroom mixture. Sprinkle approximately 1 teaspoon of seasoning blend over mixture. Lay a corn tortilla over mixture. While cooking, flatten quesadilla with spatula. Flip quesadilla and cook other side until tortilla is brown and crispy
3. Repeat with remaining ingredients
4. Serve with sour cream and guacamole.
Serving Size: 1 meal for 1 individual.
