BBQ Baked Beans

This recipe is enough for 2-4 people, but I usually double or triple for potlucks 

Ingredients

1/2 lb bacon (cut to pieces) 
1 medium onion, diced - or use less fresh onion and substitute onion powder later depending on your families taste 
1/3 cup sugar
1/3 cup packed light brown sugar
1/4 cup ketchup 
1/4 cup BBQ sauce (sweet baby rays) 
1-2 Tbsp prepared dijon mustard
1/2 tsp paprika or cayenne pepper (depending on taste)
1/2 tsp chili powder
1-2 Tbsp Worcestershire sauce, depending on taste
1 tsp garlic powder 
1 (16 oz) pork and beans (I use Van Camps) - all the juices
1 (16 oz) kidney beans, drained and rinsed
1 (16 oz) great northern beans, drained and rinsed

In a skillet cook bacon and onions until onions are tender. Mix sugars, ketchup, bbq sauce, mustard, pepper, chili powder, worcestershire sauce, garlic powder in a separate bowl. Combine beans, sauce mixture, and meat/onion mixture in a slow cooker. Cook on high for 2 two hours or low for a few hours until all ingredients are simmered together.

Corn Salad

I can't completely take credit for this recipe...It's from my boss. 


Ingredients: 
Onions (thinly sliced)
Olive Oil
fresh or frozen corn (de-thawed)
Cumin
Brown Sugar
Kosher Salt
Fresh Ground Pepper
Fresh Cilantro

Directions: 
Saute onions in olive oil. Mix Corn, Olive Oil, Cumin, Brown Sugar, Salt and pepper to taste, Toss to coat. Spread mixture on a cookie sheet. Broil until corn is carmelized. Toss again. Broil again. Remove from oven and add cilantro. Serve warm or cold.

Chicken Makhani

Ingredients:

1 Tbps canola oil
1 small onion (minced)
2 Tbsp butter
2 cloves fresh garlic (minced)
2 inches ginger (minced)
1 tsp chicken curry masala
1 tsp rajwadi garam masala
1 tsp garam masala
1 tsp cumin
1/2 tsp chili powder
1 bay leaf
pinch of salt
2 tsp lemon juice
4 chicken thighs (bone-in)
1/4 plain yogurt
1 cup tomato sauce
1 cup half and half
1/2 cup ground almonds
2 potato (cubed) - optional

Directions:
Heat oil in pan. Caramelize onions in oil (approximately 10-15 minutes). Add butter, garlic, ginger. Cook for another 5 minutes. Add curry masala, rajwadi garam masala, garam masala, cumin, chili powder, bay leaf, salt and lemon juice. Stir for 1 minute. Add chicken - sear with spices. Add plain yogurt, tomato sauce, and half and half. Cook for 5 minutes. Add ground almonds and potatoes. Simmer for 30 minutes.
Serve over hot rice!
