Peanut Butter Baked Oatmeal
The person who made this recipe recommends using quick oats, but I used old fashioned since they are less processed. I have doubled this and it made a full 9x13 plus 12 muffins. I use less sugar personally, and then add a little on top and broil it as with the other recipe. You can probably also use maple syrup, agave, or banana- I would just add a little extra oats.
3 cups quick cooking oats
0.5 cup brown sugar
1 cup milk
3 Tablespoons butter, melted
2 medium eggs
2 teaspoons baking powder
0.75 teaspoon salt
2 teaspoons vanilla
0.5 cup peanut butter
Mix all ingredients and then pour into a sprayed 9x13 pan, or into 12 muffin cups. Bake pan 30 minutes or so. I think I checked the muffins after 20 minutes at 375.
You can also apparently freeze the mix and then bake the same way once thawed.
